The Coyote Roadhouse “Kanga” Reuben
Many people think about corned beef… particularly, corned beef and cabbage. While we serve corned beef & cabbage over the St. Patrick’s Day celebration, we serve up a Reuben Sandwich every day. Our “Kanga” Reuben is one of our most popular sandwiches. The Coyote Roadhouse is located on the shores of Kangaroo Lake in Baileys Harbor, hence the play on words. Rest assured our Reuben is “corned beef.”
One of the best tips for creating a great “Kanga” Reuben sandwich is to start with a whole corned beef brisket and cooking it at a lower temperature and for a longer period of time. We cook our corned beef briskets in a commercial oven at 250 degrees for six hours.
No matter how you slice it…Stop! It does matter how you slice it. A corned beef brisket really needs to be cut across the grain. The thickness of each cut can make a difference, as well. We cross cut the brisket at approximately 1/8 inch thickness of slice for each sandwich.
The “Kanga” Reuben we prepare is made with the following ingredients:
- 2 Slices of Dark Pumpernickel Rye Bread,
- 2 to 4 Slices of Swiss cheese,
- 4 oz. of 1/8 inch Cut Slices of Corned Beef,
- 2 oz. of Sauerkraut,
- 1 oz. of Thousand Island Dressing.
Assembling our “Kanga” Reuben
We butter the outside of two pieces of pumpernickel rye bread, placing them buttered side down on a hot griddle surface.
We then fully cover the exposed side of each slice of bread with one to two slices of Swiss cheese heating them to desired softness.
Thousand Island Dressing is applied liberally to the Swiss cheese on the slice of bread that will become the top of the sandwich.
The corned beef and sauerkraut are warmed separately.
Place the sauerkraut on the slice of bread that has the Thousand Island Dressing.
Place the corned beef on the other slice of bread while still on the griddle.
The two slices of bread are ready to be placed together with the tasty contents inside.
Remove from the griddle, eat and enjoy!
